We have spent most of the week-end at the WOMAD festival in Reading. We spent loads of money on food which was a bit disappointing and when we got home we thought it might be nice to try to make something like a WOMAD curry.
This is a really gorgeous curry that even my children will eat. It has very few ingredients and is so easy to make. Go on, give it a try, it's yummy.

What you need:

2 onions
-
2 cloves garlic
-
1 piece root ginger
-
4 - 6 chicken breasts (you can use thighs)
-
1 can of coconut milk
-
250 ml chicken stock
-
1 teaspoon ground coriander
-
1 teaspoon ground cumin
-
1 teaspoon ground tumeric
-
2 - 3 fresh fat green chillis
-
1 handful frozen peas
-
1 packet of Naan Bread

1. Slice the onions thinly and gently fry them in a little bit of oil, adding half a teaspoon of salt and stirring them around. They should not go brown.
2. After a few minutes add grated ginger, chopped garlic, chopped chillis and the spices.
3. Let this cook for a couple of minutes. Add the tin of coconut milk and the 250 ml of chicken stock. Bring to the boil.

4. Now add the chicken, which you have chopped into chunks. Let this cook for about 15 minutes without a lid on.
5. Now add a handful of peas or beans if you have them. Cook for a further 5 minutes.
6. If you have some, mix 2 teaspoons of cornflour to a bit of water. Add this to the curry to thicken up the sauce. If you don't have any, you can leave the sauce runny.

7. Serve in a bowl with rice and a naan bread at the side. It is absolutely delicious and so easy. You can sprinkle it with chopped fresh coriander and put a blob of plain yoghurt on the side.
